§ 5.16.010. Purpose and intent.¶
It is the purpose and intent of this chapter to prevent the spread of infectious disease and to attain a uniform standard by requiring all food handlers to demonstrate through process of examination that they possess an adequate knowledge of the sanitary principles and practices within the food industry.

§ 5.16.020. Definitions.¶
For the purpose of this chapter, the following definitions shall apply unless the context clearly indicates or requires a different meaning.
“Food worker’s certificate”
means a statement issued by the Health Officer certifying that a person is free from active communicable tuberculosis in a manner acceptable to the Health Officer, and has satisfactorily demonstrated his or her competency in food sanitation principles and practices.
“Food worker’s manual”
means the manual prepared and distributed to food handlers by the Health Officer that describes acceptable procedures and sanitary practices as it pertains to the retail food service industry.
“Health Officer”
means the Health Officer of the County or his or her designated representative.

§ 5.16.030. Adoption of certain County restrictions.¶
A. Ordinance 492.7 of the County of Riverside, requiring grading/scoring and posting of a score card reflecting the earned grade of food handling establishments, and any amendments thereto, is adopted by reference.
B. Ordinance 567 of the County of Riverside, requiring all food handlers or workers to obtain and post a current food handler certificate, and any amendments thereto, is adopted by reference.
C. Ordinance 580 of the County of Riverside, providing for regulation and prohibition of mobile food preparation units (canteen trucks), and any amendments thereto, is adopted by reference.
